This recipe is simple to make and quite the kid pleaser. It isn’t quite as easy as mixing up Hungry Jack, but have you looked at those ingredients? (Hint: contains bioengineered ingredients)

The beauty of this recipe is that it’s flexible. I use coconut sugar to sweeten it, but you can use white sugar. I use butter, but vegetable oil is always an alternative. I’ve even been snowed in before and had to make the milk out of dry milk powder. It turned out good! So work with the ingredients you have.

Easy Pancake Recipe

  • 2 cups organic all purpose flour
  • 2 tbsp baking powder
  • 1 tbsp coconut sugar
  • pinch of salt
  • 2 cups whole milk
  • 2 eggs
  • 4 tbsp butter, melted
Those top two are ready to flip! And by the time you get those flipped, the bottom two will be ready.

Mix the dry ingredients together in a bowl. Add in milk and eggs and blend well. Mix in melted butter until smooth. Pour batter by the ladle full onto a greased griddle (or large skillet) over medium heat. When pancake begins to bubble on top and dry out just a bit, flip it, and continue to cook for one more minute. Top with maple syrup.
